You may remember that in the dim and distant past of last week the sun was shining, the skies were blue and the temperature was over 20c. That was when I made this oh-so-refreshing strawberry rhubarb cordial (now a hot chocolate would seem more apt), but I was laid low that very afternoon with a stomach bug that had me trapped in a daytime TV nightmare for the rest of the week.

Anyway I am finally getting to post this a week later, when it's cold and grey. Sorry about that. Fingers crossed that last week wasn't actually "summer" and you might get the opportunity to make some cordial for yourself. It's really quite easy, it just takes a little time. My boys loved it mixed with sparkling water - and I loved it blitzed with some ice and rum to make an epic strawberry rhubarb daiquiri.

To make your own you will need:

600g strawberries - hulled and roughly chopped 8 sticks of rhubarb, wash and chopped into 1 inch pieces 640g caster sugar (I know, I know it's an awful lot - but the cordial is quite concentrated and you only need a dash in a glass with a good lot of water) 2 litres water

Makes 2 litres

Method:

Put your fruit into a large pan and pour over the sugar. Turn the heat on very low and warm the fruit gently for 10 minutes or until it has begun to soften (your rhubarb will still be fairly firm). Pour over the water and turn up the heat a bit. Cook for another 15 minutes or until the rhubarb is tender. Turn off the heat and leave to cool completely.

I got bored of waiting for mine to cool so I filled the sink with cold water and sat the pan in there for a while, changing the water every so often to speed up the cooling process.

Strain out the fruit. I just used a sieve lined with a clean lint free tea towel (the glass cloth sort). Press the fruit well to remove as much flavour as possible.

Store in bottles in the fridge (keeps for several weeks).

Dilute to taste with plenty of sparkling water. I found one part cordial to five parts water and some ice worked well.

To make a daiquiri put a shot of rum, two shots of cordial and three fresh strawberries into a blender with two cups of ice cubes. Blitz up and serve in a glass with a sugared rim. Yum.
